In the Philippines, lechon — whole pig slow-roasted over charcoal — is not just food. It is celebration, heritage, and identity. Nowhere is this more true than in Pampanga, the country's undisputed culinary capital. And nowhere in Pampanga is lechon treated with more reverence and creativity than at Bale Dutung.

The I Love Lechon degustation is a 10-course, four-hour exploration of the pig in its most glorious form — conceived by celebrated chef, artist, sculptor, and food historian Claude Tayag and his wife Mary Ann, inside their extraordinary hand-built wooden house in Angeles City.

This is not a restaurant. There is no menu board, no walk-ins, no generic hospitality. You are invited into a working artist's home — filled with Claude's paintings, sculptures, and antique cooking relics — and fed the most extraordinary version of Filipino lechon culture you will find anywhere in the world.

The menu

The I Love Lechon menu showcases the whole pig across multiple preparations — from crackling skin to braised belly — in a progression that builds in intensity and complexity.

Course 3 Kapampangan Sisig Grilled pig's ears and liver with calamansi, red onions, and chilies — the original recipe
Course 4 Lechon Belly Slow-roasted, charcoal-basted pork belly with native tomato relish
Course 5 Bulanglang Kapampangan A cleansing vegetable broth — a traditional Kapampangan palate reset
Course 6 Kare-Kare Braised pork in peanut sauce, served with bagoong (fermented shrimp paste)
Course 7 Lechon Head The most prized parts — cheek, ear, snout — with native vinegar dipping sauce
Course 8 Lechon de Leche Suckling pig — delicate and milky, a deliberate counterpoint to the full roast
Dessert Paradiso Yam, coconut, and egg yolk in carabao's milk, with locally sourced coffee

Frequently asked questions

Is this really where Anthony Bourdain ate?

Yes. Chef Claude Tayag hosted Anthony Bourdain at Bale Dutung for the Philippine episode of No Reservations, and the Tayags have since named a menu variation in his honour. The degustation you'll experience is the same tradition that earned Bale Dutung international recognition.

Our group has fewer than 12 people. Can we still book?

Yes. We can arrange to have your group joined with another reservation on the same date so the 12-person minimum is met. Alternatively, groups of 8 or more may contact Bale Dutung directly to request a private seating, subject to availability.

We have a guest who doesn't eat pork. Can they be accommodated?

The I Love Lechon menu is pork-centric by design. Please flag any dietary restrictions at time of booking and Gravelton will communicate with the Tayags about possible accommodations. This must be noted before confirmation.

Do I need to speak Filipino or Tagalog?

Not at all. The lunch is hosted in English, walking guests through each course with warmth and depth. The experience is fully accessible to international visitors.

What is the cancellation policy?

Cancellations (full refund) and booking transfers are accepted until 23 September 2026, 11:59 PM (Philippine Time). After that date, bookings can no longer be cancelled or transferred. Email gravelton@graveltonph.com before the deadline.
